Granny’s Homemade Biscuits


When Hubby and I first got married one of the things that he wanted me to cook for him was homemade biscuits. I had never made biscuits before, as far as I was concerned biscuits were something that you bought at the store in a can. However that just wasn’t the same for Hubby. In fact he told me that he knew how to make biscuits and when I learned how to make biscuits for him then he would make his biscuits for me.

Learning how to make biscuits from scratch was a struggle for me. I used Bisquick and several package mixes but they always came out heavy and hard as rocks. I got really discouraged and gave up, Hubby had to settle for 2nd best with frozen biscuits.

Then in early 2002 I was able to quit work and become a stay at home wife. With the realization that I had way to much time on my hands; I found that I needed to find something to do to occupy not only my hands but my mind too. That’s when I discovered that I really didn’t hate cooking as much as I always had thought I had.

One of the first things that I “tackled” was once again trying to learn how to make biscuits. I had the internet as a resource for finding the perfect recipe. What I discovered was that there wasn’t a perfect recipe, at least not one that was exactly what I was looking for. It did however give me a starting point to refine and define my own recipe. It’s taken me several years of trial and error but I finally came up with what Hubby and my grandchildren think are biscuits as good as any they have ever eaten. Oh, and as for Hubby making me biscuits, he didn’t know how to make them, that was just the ploy he used to goad me into learning how to make them….men, you can’t live with them and you can’t cut them up and use them as fish bait.

This recipe can be doubled but it is really hard to work with when doubled because of the size of the dough ball is really hard to knead; but it does freeze well. I’ve added the directions for freezing at the end of the recipe.

Granny’s Homemade Biscuits

2 cups all purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
2 tablespoons sugar
1/4 cup butter or margarine
3/4 cup milk

Combine all dry ingredient and blend well with whisk. Cut in butter until resembles coarse bread crumbs. Stir in milk until all comes together to form a dough ball. Turn out dough ball onto a heavily floured surface (I use wax paper). Let set for a couple of minutes and then knead for about a minute and then re-flour surface and pat out to about 1/2″ thick. Cut biscuits with floured biscuit cutter and place into ungreased baking pan. Form remaining dough into ball and repeat until all dough made into biscuits. This recipe will make approximately 12 biscuits. Bake in 425-450 degree oven for 12-15 minutes. This recipe freeze well too. Just place your cut biscuits onto a cookie sheet lined with wax paper or parchment paper and place cookie sheet into freeze making sure to keep level. Once frozen remove and place into a freezer bag and place into freezer. When ready to use just follow baking directions and bake only the amount that you need, you do not have to bake all of them at one time.

    This sounds good and I have eaten and made lots of biscuits in my time!! I just got a taste of biscuits that aren’t like mine or yours and I want to figure them out. Maybe you can help! They are very thin and buttery and virtually melt in your mouth!! They are not as dense as mine and are unusually soft and wonderful!! Can’t ask the person who makes them, she owns a restaurant and won’t share!!! Any ideas!?

Together we have six kids and they are here every other weekend and we make biscuits n gravy everytime. This recipe will be used often in this household.     I just made a batch but I placed the dough in my bread machine on the dough setting and I put shredded sharp cheddar in the dough and sprinkled on the buttered tops, grated Romano. They are soooo good. Melt in your mouth. I also wrapped some of the cheddar dough around a hot dog sausage with sliced seasoned tomatoes (make sure they are patted dry) for my finicky children.     These are very good. My husband made a point to tell me to hold on to this recipe. He is picky and hardly says more then “these are o.k.” or “these are pretty good” but he actually said to “hold on to this recipe” for these!! Thank you.

    I’ve never made homemade biscuits before and I tried your reciepe, wow I loved it, thanks. although, I rolled the dough out to about 1/4 in. and foded it in half to create a split in the center. Breakfast was a hit and yes, Granny’s Kitchen was given the credit, lol I’m using it from now on.

      Jessica, try turning the temperature down on your oven. All ovens cook differently and it could be that your temperature is too hot (you might need an oven thermometer).

    i just took them out of the oven now and iv got one in my mouth as im writing this! they are nice and soft but i cant really taste the sugar in them. will try again but will apt for another tsbp of sugar as they are a bit bland. but nonetheless great recipe!

    This was an awesome recipe, Thank you! ive made them twice now and they are a hit! haha, although i dont have the cutter, i used a glass that came in a package liquor set from last year (Crown Royal) so i was not able to get 12 but they were awesome! in fact its 5 am here, my girl will be getting up for work soon so i think ill go make some biscuits !     I moved to the UK years ago, where biscuits are not available in a can…I have tried unsuccessfully for years to find a biscuit recipe that was both likable and not too time consuming to prepare. These biscuits are wonderful and they only took about 10 mins prep and 12 mins bake time. Thanks for a fabulous recipe that I will use regularly! 🙂

And I like that it really does not take that long to make them in the mornings for breakfast, my family loves them, so do I, so I will keep making these. btw, do you by any chance know how to make a good honey glaze for them? I have been wanting honey glazed biscuits but I cant find a good recipe for it

    Thanks Granny! I can’t tell you how much I missed those biscuits. I am just over-the-hill and haven’t had any in 20 years. I tried a few other recipes and they didn’t work out so well. These were great. I might try using bacon grease and buttermilk instead next time, I clearly remember my mom using both. Also, I preheated my baking dish (read : giant cast iron skillet) which gave them the cruchy bottoms I love so much. Keep on baking! How about your recipe for White Biscuit Gravy?

    I keep coming across recipes that call for All-Purpose flour. What am I to do if all I have on hand is Self-Rising? What do I leave out to use it?

    If all you have is self-rising flour you leave out the baking powder.

    Love this recipe! For a first time homemade biscuit maker these turned out perfect. Great for some southern biscuits and gravy…. Only suggestion let the dough set in the fridge for about 30 min before and after you roll in the flour, this makes for a less sticky more manageable dough ball.

    I was craving biscuits and gravy and the kids wanted biscuits in a bad way. I had none in the fridge or any in the freezer so I decided now would be a good time to frigure out how to make homemade busciuts. See, I try to stay out of the kitchen as much as I can, I do not like cooking. My dear friend Google brought you recipe up in seconds (I think you were the second on the list!) and after reading the comments I just knew I had to make these! It took no time at all to have some dough made and ready to be cut into biscuits! I don’t own a biscuit cutter so I used one of my Mason jar cups and it made the perfect sized biscuits for my little boys to eat! We LOVE them. Can’t wait for my husband, the cook in the hosue, to try these out. He wil be blown away!

    I am so grateful to have found this recipe. I have tried making biscuits off and on in the past, but never with the success these gave me. I had my over a bit too hot I think, because they were a bit crunchy on the outside, so I will lower the temp for the next batch.

    The best part was how easy and quick these went together. They puffed up really nice and had a nice flavor. I cooked them in a cast iron skillet.

    I will be printing this to a pdf and saving it in my favorites. Thank you so much for the share.

    I just made these biscuits this morning. I use self-rising flour because that’s all I had, but I omitted the soda and salt because of that. They came out flat. I ate them with white gravy so it was a little OK, but definitely could not be split for jelly in the middle. Any ideas why they ended up flat and dense?

    I am not sure why they came out the way they did. I don’t use self-rising flour because I never get the results I want when using it. You might try again but go ahead and use a reduced amount of baking powder, it might take some experimentation to figure out how much baking powder you need to use.

    I was looking for an easy homemade biscuit recipe for breakfast this morning, this was the 2nd recipe on the list. I am glad this is the one I chose to make for my family. Usually we make store bought can biscuits and there are leftovers. well not this morning. These are the best biscuits ever, my daughters boyfriend commented that they are better than the biscuits at cracker barrel. I will not buy store biscuits anymore. I followed the recipe exactly as posted, they were not dry or hard. The biscuits were perfect.

    WOW, what a compliment because I think Cracker Barrel has pretty good biscuits. I’m glad that your family enjoyed them.

    I am a stay at home dad and disabled vet, I have found that I truly enjoy cooking. I have felt the calling of a food ministery at my church, so I cook breakfast for my Sunday school class each Sunday morning. I try to make everything from scratch and have tried several recipes for buscuits and have had to resort to half homemade and half Bisquick. Last night I tried your recipe and tripiled it. I have never left a comment for a recipe before, but I had to tell you that these turned out perfect. I used Butterd Flavor Crisco as the fat, and they were great. Thank you very much, Mike.

    I have no idea where it’s coming from, possibly the baking soda? I used different flour today, I used Splenda instead of sugar and yeah. That’s pretty much it.

    Chris, if you are using baking soda instead of baking powder as the recipe calls for then the bitterness is indeed coming from the baking soda.

    I tried making these bisquits. I did improvise a little. I used self rising flour instead of all purpose. It still tastes good, however, my bisquits are a little hard. What am I doing wrong? =/

    First of all, it’s never a good idea to just substitute one type of flour for another unless you make some other changes too. All purpose flour doesn’t have any type of leavening and the self-rising flour does. However, that should not be the cause for the dryness of your biscuits. More than likely, you are getting your dough to dry to start with. The dough, while you are kneading it should be sticky and parts cling to your hands. You’ll want to work flour into it until it’s the correct consistency, not to wet but not too dry either. For me that was the tricky part of learning to make biscuits because if the dough is too dry to start with, the biscuits tend to turn out hard and in my case, hard as rocks. You may have to sift your flour to get the correct amount. I don’t sift but I scoop my flour into my measuring cup but the tablespoonful and shake it off the spoon. If you are dipping your measuring cup into the flour and then just leveling it off, you may be compacting the flour and actually getting too much flour. The correct way is to sift the flour but I’m too lazy to go through that extra step and have found that scooping it out as I mentioned above works for me.

    I didn’t have baking powder, only soda so I cut it to 1/2 TBSP, added a little garlic powder and a gratuitous amount of finely shredded cheddar cheese to the batter as well as some on top. I also don’t own a biscuit cutter, so I just made drop biscuits and the recipe still worked wonderfully.

    I just made these biscuits and they turned out great. I substituted 1 cup of the all purpose flour for superfine cake flour and they were so light and delicate. Yum!

      I’m not sure I understand your question since the recipe calls for milk, but if you are asking if water can be used instead of milk, I wouldn’t advise it.

    So I tried these because I’ve been wanting to add something extra to my dinners for my family of 5. We LOVE them! I’ve made them 3 times this week. So easy to make and just adds to my huge dinners. They go with just about anything. My husband is at Fort Carson so I lowered the amount of baking powder and temp just a bit because of the elevation, but they’re delicious!

    I made this recipe and added in finely chopped bacon ( I put the bacon in the food processor.) and the biscuits came out great, I ate all the ones I made which were on the small side because I had to use one of my drinking glasses since I didn’t have a cookie cutter or biscuit cutter. I also had enough dough to cut more up and freeze them so I have about 12 frozen.

      kkay, yes you can use self rising flour instead of all purpose flour, just be use to eliminate the baking powder. Be sure your self-rising flour is fresh, it tends to not give as good of results if it’s not fresh, IE biscuits don’t rise like the should. Same is true if your baking powder is old.

    I cannot wait to try this recipe tonight…My hubby wants biscuits and gravy but is skeptical if I can make a good homemade biscuit… I will report back …. 🙂 Do you think it’s better to use butter or butter flavored crisco?     i was so dissapointed when they came out i thought they would more and be golden instead they were brownish on bottom and white on top… had to turn on the broiler on to make them more edible to look at. i dont know if im going to put them on the table or not…. i used exactly what was in the recipe and my flour and baking powder were both bought within the past month was so excited, disappointed now. Will try them again soon to see if they come out better. If not will have to do some research on how to do the buscuit that i had in mind, thank you for posting the recipe anyway. Alot of other people were happy with the recipe its probally just me.

    I found this recipe about 6 months ago (i believe) I love the biscuits and that they are easy to freeze also. I always have to put extra biscuits in my husbands lunchbox for everyone else he works with. I have given the recipe to everyone and they all love it. thank you so much.

    Hi, i am a stay at home mom of 2 lil ones and i never cared for baking or cooking do to our small apt. kithens but recently got a new home with a good size kithen and now i love to cook and try new things.     I just Made these and seved them along side a stew. I reccomend with a savory dish half the amount of sugar as they are a lil sweet. I also had one with honey and was perfect!

    I had to come back here and thank you for giving me the oomph to stick to what I love – cooking homemade food for my family. My story has been a little opposite yours in that, I was able to stay home to raise my children, until my divorce.     Gave this recipe a shot this morning. My biscuits were definitely edible and tasty, but I think I made an error somewhere. I think it’s a simple as rolling the biscuits out to the right thickness because some rose beautifully, bother others didn’t. Nontheless, they were very yummy and I will work to perfect them.     These biscuits are amazing. I’ve made them four times since I came across this recipe. They are wicked easy to make and freaking delicious.

    I make them to go with a slow-cooked chicken stew. I slice the biscuits in half and put the bottom half in a bowl, pour some stew on, and then put the top fo the biscuit over the stew. It’s a wonderful dinner for winter.

    I’m 49 and had never made biscuits in my life until this morning. My husband wanted bisuits with our eggs and bacon so I googled and found this recipe.     I am making Meatloaf, mashed tatoes and corn tonight and would love to make the biscuits. I have everything but the baking powder. I think I have self rising flour (i put it in a canister so threw away the packing). Do i use all the same amount of ingredients if i am not using the bp? When I was younger i used to make a homemade biscuit that called for mayonaisse. I cant remember the recipe. Do you know of one that calls for mayo? Thanks so much for this recipe. I will pick up bp next time i go shopping. Cant wait to try it.
